Fluffy AF Pancakes


• A Kids Sunday Fave • Store cupboard ingredients. •

1 cup of flour (125 g) 1 tbsp coconut sugar 1 tbsp baking powder ½ teaspoon salt 1 cup non-dairy milk, like almond (240 mL) 1 tsp Vanilla essence 1 tablespoon apple cider vinegar Maple syrup / Agave •

Instructions •

In a medium bowl, add the flour, sugar, baking powder, and salt, and stir to combine

Then add almond milk, apple cider vinegar, and vanilla, and stir to combine and whisk until smooth

Let batter rest for 5 minutes, this is essential

Pour about ½ cup of batter onto a nonstick pan or griddle over medium heat. (Get the pan nice and hot first, only a hot pan will create the fluff)

When the top begins to bubble, flip the pancake and cook until golden

Serve warm with maple or agave and add your fruits, nuts and yogurt. •
